1 teaspoons olive oil
1 piece of smoked pork sausage, each sliced into 1/2-inch rounds
1 Chopped chopped yellow onion
1 Chopped green bell pepper
1 stalk of celery
½ tsp garlic, minced
1 cup red beans, rinsed and drained
½ cup diced tomatoes, in their own juices
½ teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
2 teaspoons Cajun or Creole seasoning
1-2 Cups of Cooked Rice
Heat olive oil in saute pan over medium heat. Add the sliced sausage rounds and cook, stirring occasionally. To the saute pan with the rendered sausage fat, add the onion, celery and green pepper and cook, stirring frequently, for about 5-10 minutes, until tender. Add garlic and stir constantly for 30 seconds, until fragrant.
When vegetables are cooked, stir in red beans, diced tomatoes and their juices, salt, black pepper, cayenne, and Creole seasoning. Cook for 3 minutes. Add cooked rice. Saute for another 5 minutes, stirring occasionally.
